Food hygiene regulations have been put in place to ensure that caterers must either have food hygiene training or be closely supervised and instructed by someone who does.

Depending on the type of food that you will be handling and whether you will be acting in a supervisory capacity of other, different types of training may be needed to ensure that you obtain the required qualifications.

By law, you also need HACCP training if you are responsible for developing or maintaining a FSMS (Food Safety Management System).

Legal Requirements

The Catering Industry Guide (which EHOs follow when interpreting legal requirements) states suitable food hygiene training courses for different job roles: Mojito

  • Caterers preparing open high risk foods must have obtained a Foundation (Level 2) Food Hygiene Certificate (or an equivalent level of training) within three months of starting work. Prior to this, they need to be closely supervised. 
  • It is good practice for caterers who supervise others to also have an Intermediate (Level 3) Food Hygiene Certificate and/or an Advanced (Level 4) Food Hygiene Certificate.
